salmon salad


after the fish tacos last week, i was feeling a bit more confident about my fish making abilities.
so i decided to be brave and try my parents famous recipe for honey mustard glazed salmon.
truth be told, my confidence and bravery were highly attributed to nelson manning the grill and cooking the actual salmon.
i did supervise the grilling, which i'm sure was exceedingly helpful.
i also put on a nice coating from this little guy.

i spent about 15 minutes looking for the original honey bear when i noticed the no nonsense obvious choice.


i really slathered this organic (and on sale!) salmon with the honey mustard bear.

before a mean grilling!

and if you peek to the left, you can see i made some asparagus too!


well since they're on the grill, clearly i did not make them since i have an illogical fear of the grill.
i think the fear comes from the finality of the grill.
there is no saving an item.
every item is always two seconds away a mean charring.
even last night while i "helped" nelzo do the grillin' i kept telling him that if the salmon and asparagus were ruined we still had salad with mango.
i was really thinking, maybe then we can go to five guys.....
but then both the salmon and asparagus turned out wonderfully tender and flavorful.
probably because of me and my makeshift orange marinate/dressing.


oh and my brilliance of adding mango to baby lettuces.
that must be it right?


oh and see that little thumb in the left hand corner?
i didn't eat it.


i'm just so blind i didn't even see it, too focused on the awesomeness of the salmon.

Recipe: Salmon Salad

Ingredients:
2/3 pound organic salmon filet
1/3 cup honey mustard 
1 mango, skin removed, diced
4 cups baby lettuces
1 orange,zest and juice
1 tbsp olive oil
20 asparagus stalks
handful cilantro
1 tsp red pepper flake
1/2 tsp salt
1/4 tsp pepper

Method:
coat salmon in honey mustard, let marinate in the fridge 1 hour
boil water, cook frozen asparagus 3 minutes, remove and let cool
zest and juice an orange into a bowl, whisk in olive oil, salt, pepper, red pepper flake and cilantro
add about 1/3 of the orange marinate/dressing to the asparagus, let marinate about 30 minutes
cook the asparagus and salmon on the grill (salmon about 5-6 minutes per side, asparagus about 3-5 minutes total if precooked)
toss baby lettuces, mango and remaining orange dressing
top greens with salmon and asparagus
