life is officially pretty excellent now.
no matter the six new pimples that have come to visit,
or that comcast has increased our cable bill without warning,
that sam cooke kicks more seed out of his cage than he actually eats,
that we're supposed to get freezing this week,
that my iphone has avocado in the crevices
or even that i've been singing the weeds theme song for three days.
straight.
straight.
none of it matters.
because avocado fries have come into my life.
and all is right with the world.

apparently the ny times was in on this phenomenon as well.
but ignorant moi had never heard of avocado fries.
i bought an avocado on friday night.
and by sunday afternoon i was ready.
of course the star was still front and center
but the coatings changed a bit..
and the result
also included a dip.
all fries need a dip.
a vehicle that enhances the fry.
ketchup would never have sufficed here.
i went another direction.
it made passing go easier than getting a community chest card.
please try these and i insist you try the dip as well.

Recipe: Avocado Fries With Salsa Creme
Avocado Fries (adapted from Beth Cooks)
Ingredients
1 avocado
2 tbsp white flour
2 tbsp whole wheat four
1/4 tsp red pepper flake
1/4 cup greek yogurt
1 tbsp water
1 tbsp water
2/3 cup organic bread crumbs
Method:
-in bowl one: add flours and red pepper flake
-in bowl two: add greek yogurt and water, stir to combine
-in bowl three: add breadcumbs
-slice avocado into thin strips
-dip into flour, then greek yogurt and then breadcumbs
this does get a bit messy, i found it best to work with one hand, leaving the other clean to start again with the avocado:)

-place slices on foiled pan sprayed with cooking spray
-spray breaded slices with a bit more cooking spray and salt
-bake at 450 for 20 minutes, flipping at 10 minutes
while the avocado fries bake....make your dip
Salsa Creme:
Ingredients:
1/4 cup greek yogurt
1/4 cup salsa
1/4 tsp red pepper flake
1/4 tsp chili powder
Method:
-combine all ingredients till smooth
-add more spice if you so desire
