white pizza




I started to develop a distaste for typical red pizza during my pregnancy with Solomon. I don't know if it was the acidity of the tomato sauce that was unsettling to my stomach or just my neurotic taste buds throwing our household for a loop. Either way, we only ordered white pies, and always from Lost Dog Cafe. Lost Dog has a variety of white pies, all being quite tasty, and almost all with the lovely garlic butter. But they don't deliver. And the parking there is atrocious. And a small pizza is $20. It's all just a bit much for regular pizza consumption.

So we took our favorite pizza dough recipe, cribbed from a few garlic butter recipes and topped it with typical white pizza ingredients -- spinach, cheese and more cheese.  The results were my favorite homemade pizza to date.
 
Recipe: White Pizza

ingredients:

pizza dough (make your own, it's better)
2 cloves garlic (minced)
1.5 tbsps butter
1.5 tbsps olive oil
1.5 cups frozen spinach (thawed, with excess water removed)
2.5 cups shredded mozerella
1/3 cup parmesan cheese
salt
basil

 method:

make pizza dough
in small pot: melt butter and olive oil together, add grated garlic -- cook low for 2 minutes, turn off
preheat oven to 500
turn off smoke detector
roll out pizza dough
spread garlic butter over pizza dough
top with cheeses and spinach
drizzle a bit of olive oil and sprinkle a little salt
cook ten minutes
remove and immeaditely top with chopped basil, a bit more cheese and a drizzle of olive oil
let cool 5 minutes before declaring yourself pizza goddess
