i'm trying not to sweat those last five pregnancy/vanity pounds since they might be contributing to solomon's weight gain and his ability to sleep better and longer. or at least that's what i'm telling myself as i reach for another square of chocolate and push my old, possibly too tight favorite jeans to the back of the closet. i am trying to eat mostly healthy stuff, but it needs to be exceedingly filling and satisfying as nursing hunger is a hunger like no other.
i put together half of this veggie sandwich as my 11 a.m. snack the other day and started making another half after two bites. and maybe another half before the lunch hour had really begun. like all good things, it's messy, requires no measuring and is best enjoyed while playing pizza play doh with your three-year-old son while your six-week-old son gurgles in appreciation.
veggie sandwich:
ingredients:
rye bread
your favorite hummus, i used olive
avocado, smashed up with lime juice and liberal salt
greens, i used baby argula
sliced cumber
cheese, i've used mediterranean feta and brie (but not together, but why not?), both were stellar
method:
toast rye bread
slather one slice of bread with hummus
slather one slice of bread with smashed avocado
stack greens, cucumber and your favorite cheese inbetween
smash layers together and take large unladylike bites
