not sad desk lunch #3

i roasted chickpeas in coconut oil (recipe to come) at 7:30 a.m. with this specific lunch in mind. it's the little things that make a not sad desk lunch. and those little things can improve your outlook for an afternoon when the morning may or may not have been poo. although i read somewhere this week (good lord my memory is shot) that it's not really about the food that feeds us, but the cooking. i agree. the thought and preparation that went into this salad were just as satisfying as eating it. well, almost. this salad was sort of beyond. and then there were thin mints in the kitchen at 4 p.m. perfect lunch indeed. 

not sad desk lunch # 3:

leftover parmesan couscous (about 2/3 cup)
leftover chicken and tomatoes from this, (just a teeny bit)
1/2 avocado, diced
leftover salad: greens, grated carrot, chopped cucumber, mediterranean feta salad with lemon vinaigrette (about 1 cup)
roasted chickpeas (a good handful)
extra feta
