i love food 52's not sad desk lunch concept. why should we and our lunch and our bellies for that matter (!!) suffer because we're at work? gone from my repertoire are the days of pb&j and lean cuisine. but also gone are the days of reckless spending of ten bucks a day on something not very tasty and not very healthy. without keeping a pepper mill at my desk or busting out the college hot pot, let's see what interesting, healthy and delicious meals i can pull together in a pinch with a typical office kitchen (water cooler with hot and cold water, microwave, fridge, toaster oven).
this week's not sad desk lunch:
trader joes fish nuggets topped with lemon sea salt (cooked in the toaster oven, much better texture!)
trader joes power greens with persian cucumbers, grated carrots and homemade fig-lemon-vingiarette (2tbsps fig vinegar, 1 tbsp lemon juice, 3 tbsps olive oil, salt and pepper to taste)
orange slices
avocado slices topped with more lemon sea salt
