i threw this together in one of my classic putters a few nights ago and then completely forgot about it. i was just about to pull out the cold mac and cheese atty and i had for lunch to finish it off when i spotted the tupperware container. it's hardly a recipe, more just a little bit of this with a little bit of that. but somehow worked out nicely as a snack to power me up for the afternoon.
reinvented chicken salad
leftover chicken (i used maybe one good-sized breast), cubed
1/2 persian cucumber, diced
1/4 cup greek yogurt
lemon sea salt
mix to combine, let marinate in the fridge for a bit. would be lovely with rye triscuts.
