thursday: roasted tofu with wild porcini sea salt, mashed taters, braised baby box choy
this hot and comforting dinner came as a surprise craving on a 90 degree days in august. we make tofu almost weekly, but many times with salad or pasta of some sort, pesto tofu is my favorite. but this time i added wild porcini sea salt to the roasted tofu and focused on the side dishes. i made this recipe for braised baby box choy which sounded too good to be true, but it really wasn't! it was incredibly simple and made with ingredients i already had at home. although be warned that a big old pile of chopped bbc cooks down to just a wee bit. but it married very nicely with creamy mashed potatoes and the aforementioned tofu.
friday: shredded chicken, sauteed fresh corn and local cherry tomatoes and sri slaw over corn tortillas
i've been buying some pre-marinated chicken breasts at trader joes for the past few weeks. this week's flavor was spanish influenced and put taco night on the calendar in sharpie. i picked up some corn/wheat tortillas, local corn and grape tomatoes and a bag of per-shredded green slaw. the chicken was cooked in a pan with a little broth. the corn was sauteed in a little butter and sea salt till just warmed and then mixed with chopped grape tomatoes. and the green slaw was seasoned with a bit of srirachi, chili powder, cumin, lime juice and canola oil before marinating in the fridge for a few hours. the tortillas were fried up individually till crispy and warm and of course, overstuffed with all the fillings.
saturday: panko-crusted tilapia with sauteed olives, local cherry tomatoes, zucchini and squash
i've always been afraid of cooking fish. so i pretended i was cooking chicken to ease my anxiety. i dredged it with flour, coated it with egg and pressed it with panko before frying it up in hot canola oil. it turned out delightfully crispy and tender on its own. and had quite the depth when topped with sauteed black olives, grape tomatoes and shredded zucchini and squash.
