we've been trying to eat better -- more organic and less unpronounceable ingredients for awhile now, but even more so since atticus came on the scene. the boy is a good eater but lately he is turning his nose up at food he loved only the day before. the doctor tells us this is all normal and we should try not to react to his sticking his tongue out and throwing scrambled eggs, green beans and cheese on the floor. if you haven't had a toddler, this is HARD. after atticus sang "no, no, no, no, no" all over the playground last weekend, we're also trying to come up with other ways of saying NO. so far we've tried, "please don't do that," "that's not how boys behave," "if you don't like something that's fine, thank you for trying it" or we've just ignored his fits all together. of course, the later is the way to go. in the mean time, i don't have time or interest in making three breakfasts in order to get him to eat something every morning. surprisingly these pancakes are healthy and easy to make (i made the batter the night before) and approved by the boy. at least this week. mama for the win.
recipe: organic blueberry oatmeal pancakes
makes about a dozen silver dollar-sized pancakes
2/3 cup organic rolled oats
1/2 cup organic flour
2 tbsps organic brown sugar
1/2 tsp baking powder
1 organic egg
1/2 cup organic milk
1/4 cup water
1/2 tsp cinnamon
1 tsp vanilla
dash nutmeg
3 dozen organic blueberries, halved and smashed
organic agave syrup, for topping
method:
mix dry ingredients in a bowl
add egg,vanilla, milk and water
add smashed blueberries
if you make this batter overnight, pull out of the fridge 30 minutes before making pancakes
pour or scoop about 2 tbsps of batter onto medium hot griddle for each pancake, cook 2 minutes per side
top with organic agave or light syrup
my favorite replacement for "NO" these days is "hold up" or "heeeeeeey"
