avocado hummus



i bought a can of chick peas last week with plans to make hummus one day soon. when one day arrived i realized i was minus tahini and lemon. so all i really had was chickpeas. of course, avocado had to make an appearance on the scene and save the day. what a self important b*stard avocado can be right?

Recipe: Avocado Hummus

Ingredients:
1 can organic chick peas
1/2 small ripe avocado
1 tbsp olive oil
2 tbsp water from chick peas
1-2 tsps salt to taste ( I used lemon sea salt!)

Method:
Add all ingredients to a bowl and blend smooth with your immersion blender.
serve with crackers, spread upon toast or topped a warm baked potato.
