instant oatmeal cookie

the original first sentence of this post was "i am a patient person." then i sat there staring at the screen while the cursor blinked and my mind blanked for examples of said patience. of course, i could come up with some examples of when i've been a patient person; but there were just as many examples of how i can be such an inpatient person. like when traffic piles up and it takes two hours to drive 13 miles. or when the person in front of me at harris teeter is surprised when they have to pay and spends ten minutes writing a check (its 2012 people, enough checks!) AFTER their groceries are bagged and waiting for them. and i am waiting. and waiting. my patience is definitely tried when waiting is required. and waiting to EAT definitely makes me very inpatient.


thus the instant oatmeal cookie.

Instant Oatmeal Cookie (inspired by Carrots and Cake)

Ingredients:
1/4 cup instant oatmeal
2 tbsp egg whites
2 tsps apple sauce
1 tsp sugar
1 tsp peanut butter
1 tbsp milk
dash cinnamon

Method:
mix all ingredients till smooth, flatten into a small patty in the middle of a microwave safe bowl.
microwave 60 seconds, cool and enjoy.

note 1: i was out of flour and raisins, but seems like both would have improved the texture of the cookie slightly.
note 2:next time i must add some chocolate chips. clearly
note 3: enjoy with milk
