like chicken fried rice, except well, not.
because i used quinoa, which made it moderately healthy.
although the amount of soy sauce probably negated any healthy aspects since i added enough to fulfill my sodium content for a few days.
still boom, a twist on an old favorite.
Recipe: Fried Quinoa
Ingredients:
1 cup cooked quinoa
1 cup peas
1/2 cup vegetable broth
3 tbsp soy sauce (more for dousing after completed)
1 tsp srirachi
1 tsp garlic chili sauce
1 tsp fish sauce
1 tbsp teryaki sauce
dashes onion and garlic powder
2 eggs
Method:
cook quinoa according to directions
defrost peas
combine broth, soy sauce, fish sauce, sri, teryaki, garlic chili sauce and spices
warm a skillet to medium, spray liberally with cooking spray
whisk eggs in a bowl and add to skillet
let eggs cook about 2 minutes and start whisking
add liquids and keep whisking until thickening occurs, about 5 minutes on medium heat
add cooked quinoa and peas, stir to combine
add more soy sauce
