the best egg and cheese

a couple of weeks ago, cup of jo featured smitten kitchen on her blog debuting the 'best egg sandwich you'll ever have.' of course, it looked delicious. the pictures were mouth watering, the recipe was simple and the ingredients were likely in your fridge a dare.  i especially liked how nothing fancy was used, leaving one to think sometimes really less is more. the whole thing got me thinkin. about egg and cheeses. so much so that i had one for lunch almost every day last week. i tried adding milk to the egg, i tried a toasted and an untoasted english muffin, i grated expensive cheese on top of the sammy. 
finally, i came up with  my perfect egg and cheese sammy.


Recipe: The Best Egg and Cheese

Ingredients:
1 potato hamburger roll
1 extra large egg
1 tbsp plain greek yogurt
1 slice american cheese
1-2 tsps butter
salt and pepper


Method:
warm skillet to medium, melt in butter
whisk egg, greek yogurt and salt and pepper till yogurt is incorporated
pour egg into pan, let cook about 90 seconds and then start folding egg onto itself
lightly toast potato roll
when egg is desired consistency, top with slice american cheese
place egg between buns and scarf

  2. I tried smitten kitchen's method a week or so ago on some english muffin bread (recipe and pic on my blog) I really like the results, the texture of the egg was great.
