i made this lunch the week before the arrival of mr. atticus. it's light, refreshing and satisfying; although does take more work than say the handful of teddy grahams and slug of skim milk (yes, right from the carton) i ate for lunch a few times this past week. as we start to get to know each other better, i hope to incorporate more lunches like this into my week. i'm confident that the little man's palette is equally appreciative of both concepts.
tofu avocado stacks
(lunch for one, snack for two)
ingredients:
half block tofu
half avocado
rosemary sea salt
fig vanilla balsamic vinegar
process
cut half a block of tofu into three slabs, drain for 20 minutes
preheat oven to 350
season tofu with rosemary sea salt on both sides
roast in oven for 20 minutes, flip half way through cooking time
slice 1/2 avocado
remove tofu from oven, top with sliced avocado
drizzle with vanilla fig balsamic vinegar
