coconut macaroons


do you ever need to bring dessert somewhere and you have less than 30 minutes?
oh and do you not want it to be store bought oreos?
oh, and you want it to be tasty and impressive too?
i know i do.
but i'm also incredibly lazy and do not enjoy recipes that have too many steps, ingredients or complications.
especially when i want my sweet treat!
if you're like me, than coconut macaroons are definitely for you.
if you like coconut of course, which i've decided i do!
i like french macaroons too, of course, but those definitely fall under the category of too many steps, too many ingredients and too many complications.
and they take so much longer than 30 minutes.

Recipe: Coconut Macaroons (Alton Brown's Recipe!)

Ingredients:
4 large egg whites
Pinch salt
1/2 cup sugar 
1 (8-ounce) package sweetened shredded coconut, lightly toasted

Method:
preheat oven to 350
whip egg whites and salt until stiff, about 5-7 minutes
add sugar in 3 parts
keep on whippin' until egg whites are v. stiff indeed
fold in coconut
line sheets with parchment and cooking spray (and i still had some sticky isssues)
drop teaspoon-sized amounts on sheets
bake 15 minutes or until outsides become golden
let cool for 2 minutes and try to remove without breaking them apart or cursing (good luck)
they taste delicious and were a huge hit!

  2. I heartily agree, on all of these fronts. And on the bounty bar. In fact, these and a tub of Chocolate Rock could pretty much be my perfect night.
