usually i am a person filled with very good intentions.
i try to be a nice person.
i sleep at least 8 hours a night.
i pay my taxes.
i remember peoples birthdays.
i even pack healthy snacks for work: carrots and hummus, avocado slices, raisans.
i mean, really, i do try.
but sometimes, no matter how many good intentions i have, fried goodness just happens.
probably because it's so gosh darn easy.
and definitely because it's so god damn tasty.
also, because it produces golden and juicy chicken tenders in less than 15 minutes from start to finish.
seriously, i didn't even have enough time to make myself a snack.
and you know me, i'm all about the snackin'.
but i was in the zone, dippin' and fryin' and leavin' off g's with pure abandonment.
plus, i got to pat myself on the back for not driving to mckie dee's to fulfill my fried chicken craving.
i came, i fried and of course, i ate.
Recipe: Fried Chicken Tenders
Ingredients:
3/4 lb organic chicken tenders
1/2 cup flour
1 egg
1 cup panko breadcrumbs
1-2 tbsp water
1/2 tsp cayenne
1/2 tsp pepper
1/3 cup canola oil
Method:
add oil to pan, heat on medium till hot, supposedly 375 but i don't have a thermometer, probably 10 minutes
take three bowls, put flour in first bowl, beat egg and water in second bowl, add breadcrumbs and spices to third bowl
dip chicken in flour, shake access, egg, then breadcrumbs.
repeat with remaining chicken tender
preheat oven to 225
place 2-3 chicken tenders in hot oil (it should sizzle, but if it doesn't don't worry, mine started sizzlin' less than a minute after i added the chicken)
cook tenders about 3 minutes per side till golden and crispy
transfer to a baking sheet lined with paper towels in the oven till ready to eat
serve with a variety of dipping sauces to please your audience
I haven't made breaded chicken fingers in a while and now I am craving them. Oh and hot sauce. ...and ranch.
