quick veggie quesadilla


let's face it, weekday lunches tend to be pretty boring.
sandwiches, leftovers, vending machine crap masked as lunch, etc.
that is unless takorean shows up:

then the whole bringing lunch and being healthy thing is out.

these lovely tacos definitely pushed me out of my lunch slump and quick.
but my waistline and wallet can't handle lunch out every day.
i'm brown bagging or built-bagging it actually most days.

in a post takorean haze, i needed to cheer myself up.
i rescued the leftover black bean dip from sunday's faux superbowl party to build this quesadilla.


the idea of this lunch may seem a bit insane for work.
especially because i needed four different containers to assemble it.
and i somehow got avocado in my engagement ring while building it.


but never mind all that, because it was still bloody fantastic.


it's normal to bring a wedge of lime to work right?


clearly i've lost my mind.
but this was one tasty vegetarian quesadilla.


obviously, i hated it.


Quick Veggie Quesadilla:

Ingredients:
1 whole wheat pita
3 tbsps black bean dip
1/3 avocado
handful rocket greens or other greens
2 tbsp cilantro, torn up
wedge of lime
2-3 tbsp salsa

Method:
-slice open pita
-spread black bean dip on one side
-top dip with rocket, cilantro and avocado
-top with lime juice and a bit of salt and pepper
-then add the salsa
-toast in toaster oven for about 5 minutes

Recipe: Black Bean Dip

Ingredients:
1 can black beans, rinsed
2 cloves garlic, minced
1 shallot, minced
1 tsp cumin
1/2 tsp cayenne pepper
1/2 tsp salt
1/4 tsp pepper
1/4 cup greek yogurt
1/2 lime (zest and juice)
handful cilantro, roughly chopped (a couple of tablespoons)
2-3 tbsp water

Method:
-chop garlic and shallot finely, saute in pan with cooking spray, 2-3 minutes
-rinse beans, blend with a little water to thin out, should be fairly smooth but a little chunky
-add beans to pan
-add spices and stir to combine, cook 2-3 minutes
-add greek yogurt, lime and cilantro, cook another 2-3 minutes
-add more greek yogurt to thin out if dip gets too thick (thanks dom!)
-serve with chips and enjoy leftover as a rockin' sandwich spread
