cereal pancakes

disclaimer: this pictures sort of suck harder than usual. it was 8:30 a.m. on saturday. and i'm on decaf. have a heart.


i can't believe i'm going to say this but i wasn't in the mood for the dutch baby on sunday.
well, that's not entirely true.
i only had one egg, which=no dutch baby.
we did have this:


but ehhhh.
although i have a soft spot for bisquick shake and pour.
in our very early 20s, nelson and i lived in new york.
and we basically survived on pancakes.
we even learned to doctor them up with strawberry nesquik.
yes, it was gross.
but we were 22 and broke.
and cute.
awww shmoopy.


the shake and pour biquick is pretty nutrionless though.
and i knew i could make something a bit healthier.
enter cereal pancakes!


made with cereal of course.
what else?


doctored up with real spices.
aka not strawberry nesquik!


and pulverized till smooth.

p.s. i wish that the miniprep had a built in silencer because making these at 8:30 a.m. on a saturday probably wasn't a very nice thing to do to nelzo...

and i would have shared to make up for my noisiness


but i needed all three pancakes.
i mean, really, what's a girl to do?


why top them with grilled bananas
and
drizzle with peanut butter?
sure, sounds reasonable to me.

Recipe: Cereal Pancakes

Ingredients:
1 cup cereal of your choice (I used 1/2 cup special K protein plus and 1/2 cup fiber one)
1 egg
1/4 tsp cinnamon
1/2 tsp vanilla extract
scant 1/8 tsp ground nutmeg
scant 1/8 tsp ground ginger
1 tsp sugar (I used vanilla sugar)
1/2 tsp brown sugar
1 tbsp water

Method:
-grind all ingredients together in miniprep till relatively smooth, leave a little clumpy
-warm frying pan to medium heat and spray with cooking spray
-make three even-sized pancakes and place into pan
-let cook about 3-4 minutes on each side
-i encourage you to top these with peanut butter and bananas

  3. @loretta: they do taste more like muffins in a pancake form, so maybe squished muffins:)
    either way, tasty!
