apple sauce.


after buying the biggest bag of apples i've ever seen, my mind instantly went into an overdrive of apple recipes. apple pie. apple crisp. apple butter. apple dumpling gang (really, who watched this?) apple sauce. apples. apples. apples.  i had to do something with all those apples! of course we gave about 80% of them away, because seriously there was no way two people could eat all those apples, i mean really, look at this bag?



the good thing about this mix of red and yellow delicious apples (besides that they're delicious hello!) is that they're pretty teeny. as in, i can eat the whole apple in about 10 bites. but the unfortunate thing is that these particular apples don't really satisfy my apple craving. i needed condensed appleness to really and truly satisfy my fall apple agenda.

the results were comforting in the way that soup, your mom and a hug are always comforting. i could almost hear my body sigh in relaxation and content. besides, our apartment has smelled like heaven for two whole days. screw febreeze, next time the apartment gets a funky smell i'm just going to make apple sauce. and of course, apple sauce always reminds me of ms. keaton making country apple sauce baby for elizabeth at her beautiful 2000 acres home in vermont after she has a massive breakdown. i love this movie.

i really do love break down scenes in movies and television in general, as well as freak outs, but my favorite, of course, is the tell off scene. and this is up on my list as one of the greatest tell off scenes of all time.

Apple Sauce

Ingredients:
6 smallish apples
1/2 lemon, zest and juice
1/2 cup water
1 teaspoon cinammon
1/4 teaspoon nutmeg
1 tablespoon honey
1 tablespoon maple syrup
1 tablespoon brown sugar
smidgen of ground cloves (very technical amount)
splash apple cider

Method:
chop up apples into small pieces, keep skin on (tasty and nutritious)
warm a medium-sized soup pan to mediumish heat
spray with a bit of cooking spray
add all the chopped apples at once
proceed to add all the other ingredients, stir to combine so apples are evenly coated
let cook on medium for about 15 minutes, stirring every 5 minutes or so
turn heat to low and let simmer at least an hour
depending on how chunky you like your applesauce, i like mine sort of semi-chunky, blend in batches in your miniprep.
eat straight out of the pot, warmed in the microwave the next day at work or on top of waffles (good idea dear!)
