couscous patties.

i'm getting cheap as i get old. i just really hate throwing out food. nelzo grilled steaks and asparagus on sunday night and i made the fabulous accompaniment of tomato lentil couscous (near east brand of course). i'm still pretty scared of the grill and consider a boy job. other boy jobs include: taking out the papers and the trash, taking my car to the mechanic, checking the car for oil, really any car-related duties, cleaning the bird cage (i'm still too scared of sam cooke), etc. it's not that i can't do these things, but i know nelzo will do them better and i'm honestly, totally uninterested in learning how to do them. except for the grill....maybe this summer i'll brave the embers of death! although, i'm convinced i'm gonna blow myself up if i use the grill without supervision.

anyway, the steak and asparagus were finished off easily (excellent job dear) but we had at least a serving of couscous left. add that to the parmesan couscous from a dinner last week, equaled we just had too much unused couscous. this is a frequent occurrence in most couple households. it's really tricky to make just enough food so that you're both satisfied but without leftovers. well fear no more my friends, because these couscous patties will make you hope for leftovers. i've made them two days in a row for lunch, and might be on for round three tomorrow. the food rut continues!

start with these ingredients:
so for a good-sized lunch for me, combine:
1/2 cup of couscous
1 teaspoon parmesan
1 egg white
1/2 cup spinach
1/8 teaspoon red pepper flake
1/4 teaspoon herbs de provence
1/2 teaspoon of lemon juice
dashes salt and pepper

mix to combine:


warm a skillet to medium, spray with cooking spray and form three patties:


these will only take about 3-4 minutes per side to crisp up nicely.
add to a mixed green salad and devour.


next time, i'm thinking of adding some extra protein, leftover chicken or steak. except we never have leftover steak. go grillmaster! although its nice to finally reach out to all the vegetarians. holla!
