crab cakes.

i always consider crab cakes to be more of a summertime treat, but now that i crabtemplate it, it's more fresh maryland crabs that i should really associate with summer foodstuffs. since we're in such a modern age, you can get ridiculously delicious lump crab meat packed at its peak crabbiness at any time and thanks to brilliant buy-in-bulk-and-save-your-shirt crabablishments like costco, its affordable as well. i am not a costco member and will unlikely join because we have a hard enough time going through a regular-sized loaf of bread each week, so we're not quite ready to join the economy life. * also crab came in one of those soup-like plastic containers in the prepared food sections, but forgot the photo and Internetutes was limited*

so liz introduced me to this recipe, its actually the recipe on the side of the phillips lump crab container. you know me, i go right to the source. actually this has two sources, philllips, durr. and the liz, who is a phenomenal cook who along with her sweet husband, joe, made me beyond phenomenal food all of last weekend. they did, however, let me follow the recipe for these crab cakes all on my own. wow, i feel like their child on the first day of kindergarten. but then there will likely be tears of sadness, and these crab cakes brought tears more resembling joy.

first start with 1 lb lump crabmeat, phillips or equivalent.
then gather all your ingredients to mix with crab meat to form lovely crab cakes.

to a bowl add 1 egg, 1 tsp worcestershire sauce, 2.5 tbsp mayo, 1 tsp mustard, 1 tsp lemon juice, 1 tsp old bay, 1/2 tsp dried mustard,  1/4 tsp dried parsley, 1 tbsp melted butter and 1/2 cup of bread crumbs.

add crab meat to sauce mixture and combine.

form into 6 equal-sized patties. liz had to help me form the patties, i've never been good at this. i always over analyze if they're really equal and if someone will get short-changed and get a smaller crab cake than everyone else. etc. hello neurotic much?

now warm a skillet to medium heat with a little olive oil. probably about a tablespoon or so. once warm, add crab cakes and let cook about 7-8 minutes per side.

the result is these heavenly numbers. sorry i didn't snap a photo of the plated dinner with its accompaniments of steak and sauteed spinach. both equally delicious. i was too hungry by that point and honestly forgot till i was practically licking my plate is satisfaction
