cobb salad.

 

cobb salad definitely falls into that "why have i never made this before" category. not only is this pretty damn healthy and filling (i originally wrote healthy and healthy, durrr); but the combination of flavors proves that mr. cobb is an absolute genius. note: i must go to the brown derby at some point to try da cobb at it's originating stomping ground.

once i realized we had all the ingredients to make cobb salads last week, it seemed like a majah no brainer.

first grill up two chicken breasts, seasoned with salt, pepper and garlic olive oil. should take about 5-7 minutes per side on medium heat.


have your husband cook up some hard-boiled eggs.

 

slice up some avocado from tj's handy avocado pack.



these come four halves to pack, and you just need one half to make two salads.

 

don't forget the bacon, we were down to only two slices. just right again. i swear this salad was fated.

 

cook for 8-9 minutes and slice up to little morsels of love.

add chicken, eggs, avocado and bacon to half a bag of mixed greens.



traditionally, the cobb salad is doused in french dressing, to which i made a slight variation of with white vinegar, garlic olive oil, lemon, salt and pepper.

 

i used 1 tablespoon of the vinegar, 2 tablespoons of lemon juice and just 2 teaspoons of garlic oil, plus liberal salt and pepper. pour dressing over salad and mix throughly.



 stuff face with salad while muttering in amazement, "why have i never made this before?"

  3. I had forgotten about this salad, which I used to enjoy. Now I will make again, or maybe wait for this writer to come visit and make it for me!!
