i almost feel like its wrong to pass this off as an actual recipe. BUTT these were so incredibly easy to make yet so unbelievably delicious to eat that i had to share with you all, whether its technically a recipe or not. bacon wrapped scallops probably take a little more time to make than a crudites platter but definitely less time than making the famous seven-layer dip.
after being snowed in for too (and actually two!) many days, we decided to have an impromptu superbowl party last sunday. of course since the plows in this area leave something to be desired (its called plow the street with the blade down!), none of our friends could make it to our par-tay. sadness.we did, however, have quite the motley crue of neighbors over to watch commercials the superbowl and enjoy some tasty eats. the landlord couldn't make it though. being that i had spent way too much money on groceries this week already i was determined to make it work with what was overflowing from the fridge/freezer/pantry.
we had the slider burgers again, along with the obvious cheese/cracker tray and a variety of chips, salsa and queso. i did want something a little unexpected, especially during a blizzard, and bacon wrapped scallops seemed just the right pop-in-you-mouth appetizer. so start with those frozen scallops again from trader joes.
i probably had about half a bag left, maybe 25-30 in total. put scallops in sealed container with some water and let defrost in your fridge for a few hours. remove from fridge, drain and pat dry.
preheat your oven to 350 while you season your scallops liberally with salt, pepper and garlic olive oil.
break out more of that delicious center cut bacon!
this center cut bacon ended up being just right for the bay scallops, because bay-bys are smaller in stature than the traditional sea scallops you probably order in a restaurant. so half a slice bacon was perfect for each bay scallop.
bake for about 15-20 minutes, checking frequently toward the end of the cook time. you want the bacon crispy on these bad boys.
these were basically finito by the the time i remembered to snap the photo. so just one little lonely guy for the photo. but he wasn't lonely for long as he joined all his friends in my tummy:D
