some days just seem to run away from me without much warning. too many errands, coffee, coffee, coffee and cake for dinner; and suddenly its 11:30pm and i wonder why i'm so hungry. i got home at close to midnight last night and was pretty desperate for some sustenance and it needed to be tasty damnit. and quick. and i wasn't ordering take out.
what i really wanted (probably pretty obvious here) is an egg mcmuffin from good old mckie dees. unfortunately, as many of us have learned the hard way, breakfast is only served till 10:30am. let me climb up on my soapbox here for a minute, is it me or has this has always seemed like the most arbitrary time? why 10:30am? who is coming into mcdowell's at 10:31am in desperate need of the mcrib? not that i even really get egg mcmuffies anymore, but that's not the point. the point is i would love to have the option to purchase an egg mcmuffin at midnight. ok rant over, down from said soapbox.
with my mind fuming from my internal mckies rant and my stomach grumbling the tune of "i'm lovin' it," i chose eggs without a lot hesitation. i also had plenty of pairings that might make my eggs just fancy enough to watch the midnight showing of the top chef pre-finale. btw, padma isn't the only one sad about jennifer gettin' the boot.
start off with an egg (duhhh): whisk in a bowl with a few tablespoons of milk, dashes of salt, pepper and herbs de provence. pour into medium heated pan seasoned with butter. let these cook about 3 minutes, turning with a spatula every few seconds to prevent sticking and ensure even cooking. turn off heat.
while the eggs cook, toast a whole wheat english muffin
warm up a few slices of salami
once the muffin is toasty, the eggs are soft and the salami is crisp, it is time to assemble with cheese and argula:
place one slice of salami on each side, along with a bunch of argula , place the egg on top of the argula with a good sprinkle of cheese. your result should far and away blow the egg mcmuffin out of the water.
oh yeah and definitely feel free to be extra fancy and add a glass of dry white wine.
here you go, SAT analogy time , egg sandwiches are to white wine as:
a. cinnamon life is to two percent milk
b. miller high life is to port wine cheese
c. cocoa krispies are to chocolate milk
d. tofu is to tofu
so yeah it's b. the extra classy choice, you know, like me.
