i got home from my first class the other night about 10:30pmish and i was famished. of course i should have had dinner before i went to class but i wasn't hungry then. i was a tense freakshow of nerves. i haven't taken a college class in almost 10 years and i realize i have now become what i once hated when studying at suny oswego. a nontrad. sigh. one of those students that isn't the same age as all the younguns', doesn't know what blackboard is nor how to use it and is commuting after work in work clothes. my 18-year-old self is so ashamed.
back in college i would have hit the vending machine at any time for mountain dews aplenty and doritos galore. screw calories, orange fingers and sugar intake! or the lovely late night option at the dining hall: a carb lovers heaven of every sugary cereal imaginable, nachos drowned in cheese and various fried balls of delectability. but now life is different. i am a nontrad. and i have to watch my caloric intake. sigh. i was so depressed by this non-new fact that i almost decided it was too late to eat, but eff it i was hungry. i needed something filling but not too heavy and on the healthish side.
i quickly boiled a small pot of lightly-salted water and tossed in about 1.5 servings of whole wheat barilla plus pasta.
then after some hemming and hawing, i grabbed a pile of other ingredients that required no additional cooking (see i'm still lazy! i knew the 18 year-old was still there!):
handful spinach
1 teaspoon of garlic olive oil
liberal salt, pepper and red pepper flake
good squeeze lemon juice
plenty of grated parmesan
1 tablespoon or so of pasta water
dump all these ingredients immeaditely on the pasta after draining, the heat cooks the spinach a bit, warms the cheese and the pasta water helps bind it all together
after an extra long day, its nice to have something tasty to fill your tummy before you fall asleep to family guy reruns (btw that one is so my brother alec back in the day). yeah i may not be 18 anymore, but thats ok. it's probably good to not be surviving on processed goodness, living in ratty overalls and drinking schaefer beer every night. see i'm not old, i'm mature and classy. riiiigggghhhhtttt.

This sounds very good and also quick. Much healthier than junk food and faster than a frozen pizza or white castle burger!!!!You are my hero!!
