sandwiches.

anyone who knows me knows that i have a strong proclivity toward sandwiches. if you need proof on my love just read this, as i attest to eating too many expensive sandwiches in years past. during childhood lunch as rule is all about sandwiches. moms across the globe made their children sandwiches cut in half and wrapped in wax paper before tossing in their lunchbags each day for school. in addition to my sandwich, my lunch always contained an apple, a cookie and a hand-written napkin note. this napkin was handy for crumbs but also gave me a smile that couldn't be contained in wax paper if i tried. this commerical is sort of the modern day twist.

during the week i was a big pb and j fan. let's face it, it always traveled well and didn't need refridergation. besides it was one of the only mayoless sandwiches during the time. you know how i feel about mayo.

as for the weekends, i would get bolder -- begging for melty gooey good grilled cheese. slices of white bread slathered in butter and filled with american cheese singles. ahhhhhh yum. as i've aged (like good chedda), i've gotten sophisticated enough to handle bacon and tomato as additions. but what i like even more is a sandwich filled with at least 6 ingredients that don't seem quite right together but turn into a suprisingly winning combination of delight.

yesterday i started out with whole wheat potato bread, which i spread with a seedy fig jam onto each side:

i then thinly sliced about a 1/3 of a fugi apple and laid it gently on top of said jam:

next came turkey, provolone cheese, spinach, parmesan cheese, salt and pepper:

then i went crazy. i sprinkled a little flour over the sandwhich before soaking the entire thing in an egg, milk and cinnamon mixture (like i said, craziness!) before frying up in a medium-heat skillet:

i've seen nigella lawson do this. it was years ago, when husband was boyfriend and making a sandwich was an event. boyfriend wasn't a fan of this french toast exterior of the sandwich but trust me if you like sweet and salty combinations, you'll like this:
