i've been way too healthy lately. the last three posts were all salad related in some aspect, ahhhhhhhh! while it's important to be healthy it is equally if not more important to indulge your senses and one of the best ways to do that is with chocolate. or in this instance brownies.
it was my sister emily's bday a few weeks ago for which i purchased her a nice pile of presents, the dress looks so damn cute on her i can't even stand it. anyway the party was last weekend, and being the paranoid freakshow that i am, showing up empty-handed made me think others will think i am dissing my little sister's bday. hello, its not about ME all the time!
anyway, brownies became the gift of choice. of course i came to this conclusion around noon on saturday when i realized i already had all brownie ingredients in the house which meant i could stay in my comfy pjs for another 4 hours before racing to said celebration. yes, i am a sloth!
so starting with the wet ingredients, mix together 1 stick of softened butter, 1 cup sugar, 1 teaspoon almond extract and 2 eggs:
in another bowl gather your dry ingredients, mix 2/3 cup flour, 1/3 cup unsweetened cocoa, 1/4 teaspoon baking powder, 1/4 teaspoon salt:
now add the dry to the wet in about 3 stages to form this gooey gooey goodness:
and pour into a greased or cooking sprayed 8 or 9 inch pan:
cook about 25 minutes and 350 before you let cool and add to a pretty box as a gift because you're so delusional and self absorbed that you're positive people will think you didn't bring your sister a birthday gift. (your husband rolls his eyes here but agrees to sample brownies to make sure they're ok)
they really did look all cute in this box in mini sizes. next time i think i may frost or add some sprinkles to make them a bit more festive.
