chocolate chip cookie redux





necessity really is the mother of invention. i absolutely needed chocolate chip cookies at 5 p.m. on friday when we were scheduled to leave the house by 7 p.m. clearly not enough time for the standard soften the butter dance that usually is step 1 of my favorite chocolate chip cookie recipe. i hesitantly googled a few melted butter chocolate chip cookies before landing on the below recipe from all recipes that i of course adapted with coconut oil which just barely whispers coconut. these make a very flat cookie with crispy edges and a chewy center. be warned that they do tend to crumble quite easily.  i packed a baggie full for atty's museum date and found them in pieces. luckily, two-year-olds and their mamas are not the least but fussy and measure true cookie integrity by it's ability to delay a meltdown. 

recipe: chocolate chip cookie redux (adapted from all recipes)

ingredients:
2 cups all purpose flour
3/4 cup white sugar
3/4 cup brown sugar
1 stick salted butter, melted
4 tbsp coconut oil, melted (plus extra to grease pans)
1 egg
1 egg yolk
1/2 tsp salt
1/2 tsp baking soda
1 tbsp vanilla
2 cups chocolate chips

method:
preheat oven to 325
melt butter for 30 seconds in microwave, add coconut oil and heat another 30 seconds in microwave
add sugars and vanilla to melted butter and oil, mix to combine, add egg and egg yolk
mix dry ingredients in separate bowl
add dry to wet in two batches, stir till just combined
add chocolate chips
refrigerate dough 15-30 minutes
rub coconut oil and cookie spray on cookie sheets
using two spoons, spoon dough on sheets
bake eight minutes, rotating at four minutes, till edges are crispy, cookies will be flat
let cool one minute on pan before removing to cooling rack
makes about three dozen cookies
