crepes with apples.

last night as i was falling asleep i started thinking about what i wanted for breakfast. this is a common practice of mine, being nowhere near my next meal but still plotting its goodness. and still worse, finishing a scrumptious meal and whilst digesting, sometimes still at the table, brainstorming my next meal. this is a fairly obnoxious practice so i try not to vocalize it too much. not everyone is thinking about food all the time like i am:) but plotting breakfast as you doze off is probably a fairly common occurrence, maybe like counting sheep. One, two, three glazed donuts and a large double double! that was more like the count counting donuts on sesame street. maybe i'll just letter b.

so friday night i mentally cooked up the idea to make crepes with apples on saturday morning. i started with two of these mini granny smith apples, that of course good old trader joes sells.

chop up pretty teeny with the skin still on and add to a little sauce pan with a little water before you add some flava....
sprinkles cinnamon and nutmeg, capful of vanilla and a squirt of maple syrup. very technical measurements are always made on saturday mornings before coffee is finished brewing. oh yeah and two packets of splenda. elements also be missing from photos on saturday mornings before coffee is ingested. stir apples and spices and water together oh my! and let cook for a good 15 minutes.
if the apples dry out too much, add a little water, a tablespoon at a time to keep apples are soft.

now the crepes of course.
whisk 1 cup of flour with 1 egg.

slowly add 1/4 milk and then 1/4 cup of water.


followed by 1/8 teaspoon of salt and a good tablespoon of melted butter.

don't you just love the morton salt girl? what a cutie, i love how the umbrella is so disproportionately larger than her:)

once batter is mixed, warm a large skillet (you don't need a a crepe maker!) and spray with cooking spray or a little melted butter. pour about 1/4 cup of batter into pan and swirl.
let cook about 2 minutes before flipping over and breaking into three pieces.

first crepe. it's ok right? second one turned out much prettier
oh yea! and then fill with apples....
and then realize it's a better photo op for one.....
i would like to say pair with a steaming mug of coffee, but well mine was completely gone by the time i finished this non-arduous task. crepes really could even be a weekday breakfast, mix the crepe batter the night before, wake up and turn on your coffee, make crepes, fill with naners, peanut butter and nutella. oh yeah, that's if you went to the grocery store and have these actual items:D
