lime coconut cookies.



these became the dessert for thai night. i had planned on making sticky rice, which i absolutely love, love, love but i have never made it before, and well it sounded like it might be a bit heavy at the end of the meal. i have always had a pretty wicked sweet tooth, but i'm not the type of person who orders dessert very often in restaurants. and at most times, i make nelson split a dessert with me if a massive sweet-ladden cake is forced upon us. but i always remember my mom saying that at the end of the meal, no matter how full people are, everyone can always eat a cookie. or 3-4 if you're me. i have room for a few cookies but not for a piece of cake, or so i tell myself with as much denial as i can muster.

so when i woke up on thursday morning to finalize my grocery list, i did a quick search on the good old iphone for thai cookies and a familiar recipe with a twist came up for lime coconut cookies. not only did these cookies sound delicious, but they also sounded very similar in method to snowballs, a cookie we made a lot as kids during christmas. they turned out to be very similar indeed.

start out by mixing 2 sticks of unsalted softened butter with 1 cup of confectionery sugar on medium speed for about 4 minutes. once light and fluffy, add in 2 tablespoons of fresh lime juice.

once you've added your lime juice, stop the mixer and add the following:
2 cups of flour
1.5 teaspoons of lime zest
1/4 teaspoon of salt
1 cup of unsweetened coconut



combine till you have a smooth batter. preheat your oven to 350 and line your baking sheets with parchment. flour your hands and roll dough into 1-inch sized balls and place on cookie sheet.

 
these cookies baked for about 15 minutes, rotating the pans right around the middle mark. let them cool for about 3-4 minutes then toss in a ziploc bag filled with 1 cup of unsweetened coconut, 1 cup confectionery sugar, 1.5 teaspoons of lime zest and 2 tablespoons of cornstarch.

make sure you let the cookies cool before you coat them in the topping. i had a few tragedies in which the cookies just fell apart as i was tossing them in the coconut/sugar mixture and i was literally forced to eat them. sigh. it was a rough afternoon for me.

Recipe: Lime Coconut Cookies

Ingredients:
2 sticks of unsalted butter, softened
2 cups of confectionery sugar
2 tbsp of fresh lime juice
2 cups of flour
1.5 teaspoons of lime zest
1/4 teaspoon of salt
2 cups of unsweetened coconut
1.5 tsps lime zest
2 tbsps of cornstarch.

Method:
-preheat oven to 350
-in one bowl: mix butter, 1 cup confectionery sugar and lime juice on low for 2 minutes
-in second bowl: mix flour, 1 cup unsweetened coconut, salt and flour
-add dry ingredients to wet ingredients till combined
-flour hands lightly and roll dough into one inch balls
-place balls on parchment-lined baking pans
-bake for 15 mintues, rotate pans halfway through cooking time
-let cookies cool
-in a gallon-sized ziploc bag add: 1 cup unsweetened coconut, 1 cup confectionery sugar, lime zest and cornstarch
-add cookies (about 5 at a time) to the bag and shake around to coat with confectionery sugar mixture
