banana muffins



i love bananas. i have one almost every day on top of a toasted whole wheat english muffin that has been liberally slathered in natural peanut butter. it's my breakfast of choice and i can't get enough of it. i do like the bananas a little under ripe and for some reason they must be cold. nelson loves bananas as well but he likes them way too ripe for my taste and at room temperature. clearly, this difference in banana opinions is causing a major rift in our marriage. so much so that last week i kept the bananas on the counter and would put just one in the fridge each night for my breakfast the next morning. i am so thoughtful. well guess what happened? by the end of the week we had three overly ripe bananas that were begging to me turned into banana muffins.

Recipe: Banana Muffins (adapted from Martha)
3 ripe bananas
1/2 cup brown sugar
1/4 cup canola oil
1 egg yolk
1/2 cup all purpose flour
1/2 cup whole wheat flour
1/4 cup oatmeal
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
smidge nutmeg
1/4 cup greek yogurt

Method:
mash 2 bananas in a bowl, mix in oil, brown sugar and egg yolk.
in another bowl mix flours, baking soda, baking powder, salt and spices
add dry ingredients to wet, mix till smooth
add greek yogurt and oatmeal
slice third banana, top each muffin with two-three slices
bake at 350 for 25 minutes
