weeknight pizza


i feel like i'm becoming a 50s housewife.
i've made dinner two nights in a row, and even timed the meals completion to nelson's unlocking of the front door.
all i need now is an apron, pearls and a lobotomy to full integrate.


i suspect i will have issues with my integration as i enjoy shortcuts such as pre-packaged dough on occasion.
i also work full-time, and have no interest in spending any more than 30 minutes in the kitchen to complete dinner on a regular basis.
this kind of thinking may just get me shot.


i also enjoy sampling the toppings of my pizza as i cook them.
at one point i thought of bringing the frying pan into the living room and eating sauteed spinach, mushrooms and sausage on the living room floor while the blind side played in the background.
if i didn't have a crust or a husband that would have been a more viable option.


but i like crust, especially garlic herb crust.
and i even like my husband, especially when he's happy.
see i am a 1950s housewife!

Recipe: Weeknight Pizza

Ingredients:
-1 store bought pizza dough, preferably TJS garlic and herb
-2 sausages, I used the basil chicken/turkey variety
-2.5 cups tomato sauce
-5 ounces portabella mushroom, sliced
-1 cup frozen spinach
-1 tsp pizza seasoning (combination thyme, rosemary, oregano, etc)
-1/2 tsp salt
-1/4 tsp pepper
-1/4 tsp red pepper flake
-2 tsp olive oil
-1.5 cups of italian cheese blend

Method:
-remove dough from fridge, let come to room temperature, about 30 minutes
-preheat oven to 425
-remove sausages from casing and saute in olive oil, breaking apart with a wooden spoon. cook 5-7 minutes
-add mushroom and spinach and spices, cook an additional 10 minutes
-roll out pizza dough, top with sauce, cooked sausage-mushroom-spinach mixture and cheese
-bake for 10 minutes or until crust is golden
