pancakes


breakfast for dinner was always a treat when i was growing up.
anytime where it was encouraged to finish your dinner dessert that was covered in melted butter and drizzles of maple syrup was a good night.


yesterday i had a full day of errands.
we made an exciting trip to trak auto for new wiper blades and the grocery store for some weekly essentials.
i folded 3day-old laundry.
and even showered. before noon.
all of this meant, my meal times were a bit off.
breakfast more around 10ish, lunch closer to 3 p.m.
so dinner was basically an after thought till about 8 p.m.
blame daylight savings time.


still i wanted dinner.
and after too many say yes to the dress episodes i was in need of comfort.
besides we had just grocery shopped so we had actual food.
however, after reviewing our newly-stocked kitchen, i discovered we had shopped like high school kids when their parents are out of town.
cookie crisp cereal. ginger cookies. salt and pepper kettle chips.
not exactly dinner materials.
still, nelson was happily munching through a mug of cereal so who was i to complain?
i had fully participated in this free-for-all at giant.
at least i had resisted the fun size bag of hershey's easter candy.
as i scoured the cupboard, i found a little handle of bisquik....
but just for me?
nah, i just wanted a couple of silver dollars to call my own.


Recipe: Pancakes

Ingredients:
1/4 cup whole wheat flour
1/4 cup oatmeal
1 tsp canola oil
1/4 cup almond milk
2 tsp brown sugar
1 tsp baking powder
1/4 tsp cinnamon
1/2 tsp vanilla
1/8 tsp nutmeg
1 egg white, whipped
1/2 banana, sliced

Method:
-combine flour, oatmeal, baking soda, brown sugar, cinnamon and nutmeg
-whip egg white and vanilla till soft peaks form
-add almond milk to flour mixture
-gently add egg white to flour mixture, try not to deflate
-warm a skillet to medium, add a bit of butter
-ladle pancake batter into three pancakes
-place banana slices equally into pancakes
-cook pancakes 5 minutes per side or until golden
-top with butter and maple syrup or peanut butter
