milk n' cookies.

many afternoons growing up i returned home from school to find warm freshly-baked homemade cookies waiting with a promise of ice cold milk in the fridge. whether it had been a hard test-filled day or a red-cheeked snow day, the cookies were consumed with a relief that tomorrow was a new day, fresh with no mistakes in it. perhaps this explains my predilection for sweets, come busy stress-filled days or sunny days without a cloud in my mind; i still always want milk n' cookies in the midafternoon.

i'm very much into chocolate chip cookies, they are perhaps my favorite cookie if i had to just pick one cookie to have forever. but i also really like the variations on basic recipes, so when i spotted martha's recipe for peanut butter chocolate chip oatmeal cookies, i knew i had to try them out. i followed this recipe pretty carefully, but i'll still go over below...

add 2 sticks of softened unsalted budda, 1 cup brown sugar, 1 cup white sugar and 1/2 cup of peanut butter to a bowl. obvious warning: these aren't healthy cookies:) then add in 2 eggs and 1 teaspoon of vanilla extract. i was out of all extracts so added 1 teaspoon of whiskey. i know crazy right?


then in another bowl, i combined 3 cups of oats, 1/3 cup flour, 1 teaspoon baking powder, 1 teaspoon baking soda and 1/2 teaspoon of salt.

 
add these slowly, in stages until just combined. and then pull out your star ingredients to admire



i love the mini morsels, so cute! i definitely ate a few handfuls the night before, so i mixed in almost 2 cups of them with 2 cups of lightly salted peanuts.


so this dough was pretty awshum on its own, but i tried my bestest to just use it to achieve the finished product: cookies. not for disgusting (read:devilishly delicous) dough eating.


bake at 350 for 13 minutes or until lightly golden, rotating pans halfway through:


this recipe made something like 8 dozen cookies. i think it said it was only supposed to make 3 dozen, but that would be 3 dozen of the massive bakery style cookies. i grew up eating this semi-mini size cookie and i know it's truly a better way to eat cookies. why you ask? because then you can eat 3 cookies instead of just one of course...

 

Recipe: Peanut Butter Chocolate Chip Oatmeal Cookies

Ingredients:
2 sticks of unsalted budda, softened
1 cup brown sugar 
1 cup white sugar 
1/2 cup of peanut butter
2 eggs 
1 tsp of vanilla extract
3 cups of oats
1/3 cup flour
1 tsp baking powder
1 tsp baking soda 
1/2 teaspoon of salt
2 cups of mini chocolate morsels
2 cups of lightly salted peanuts

Method:
-preheat oven to 350
-cream butter, peanut  butter and sugars together for 2 minutes
-add eggs and vanilla and beat till smooth
-in a seperate bowl combine flour, salt, baking powder and baking soda
-add dry ingredients to wet ingredients
-mix in oatmeal by hand, followed by chocolate chips and peanuts
-bake for 12-13 minutes or till lightly golden

  1. These cookies were soooooo money! I must have inhaled 10 of them at once, no joke. They were crispy & light with a nice hint of peanut. I loved these cookies!
