when we went on our camping trip last week, each person was assigned to bring one side dish to share with the group. when it comes to summer side dishes, my favorite options is pasta salad. while there are so many combinations of flavors you can go for, i almost always make the same blend of ingredients. after researching many recipes for the past five or so years, this is truly MY recipe that i'm now going to share with you:) it's the best i've ever had.
Chop in equal size:
1 cucumber
1 can black olives
1 pint grape tomatoes
1 container herbed feta cheese
add to a bowl with a big handful of chopped basil
boil a big pot of water, salt generously and cook your pasta of choice. personally, i'm a sucker for the bowties; they're cute of course but they also help adhere the vinagerette and ingredients together. once your pasta is cooked, run it under cold water and let it cool. if you use it too soon you'll cook your ingredients and melt your feta. that is a no no!
while your pasta cools its time to make the vinegarette. now i know a lot of people believe in using a bottle of some dressing, but this homemade vingarette is so much fresher, a lot more affordable and you also can control your ingredients. all good things right?
soooo....mix together well:
zest and juice one whole lemon
1 tablespoon white wine vinegar
4-5 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
a smidge of mustard, maybe 1/2 teaspoon
now add vinagarette, pasta and chopped veggies and cheese:
ahhhh so refreshing, this really tastes like summer! it certainly will be gobbled up at any picnic, whether its at a wine-induced camping fest like ours or just sitting on your front stoop with a cold glass of iced tea.
